For me, AI is a tool like any other, nothing special but also not a thing I would ignore. If we remind the WordPress era where (specially) front-end developers were "being replaced" by this brand new tool that can make websites in minutes and would kill front-end development, but fast-forward some years and now this same tool must integrate with React and other front-end technologies. So yes, I use AI on my day-by-day but that's just a tool that helps me to apply my knowledge on software architecture and problem solving.
My development starts with a stepback to understand the needs and requirements for the project, involving a deep discovery and research of the given domain. The technical part is then planned and the tech stack is defined to fill the needs of the application. The development step is put into place and once mature, the testing and quality control will take place to make sure that the project is a high quality product.
This is the million dollar question actually, and as a good developer my answer is: it depends. Depends on the project goals, the scalability and the overall situation on the team of developers, stakeholders and product. However, balance is very important on this decision, regardless of the priority there should always be balance between them, no pasta takes 20 days to be done and even instant noodles have some sort of quality on it.
For me, I love algorithms and quality of life, so languages like Golang are my favorites to tinker around. However, when talking about solid and popular stacks, I have a
very close relation with Node related tools, those include NestJS, React, NuxtJS (used to make this website btw) and even raw TypeScript. Docker is must for me though, can't have a real scalable project without being able to reproduce your environment efficiently
